Honey soy beef stir fry


Serves: 4-5


Ingredients:

  • 500g beef stir fry strips

  • 3 diced carrots

  • 2 capsicums

  • 1 head broccoli

  • 100g snow peas

  • 1 brown onion

  • 4 cloves garlic

  • 1/2 teaspoon chilli flakes

  • Oil (extra virgin olive oil or sesame oil)

  • 2/3 cup lite soy sauce

  • 1/3 cup honey

  • 2 teaspoons grated ginger

  • 2/3 cup water

  • 1-2 reduced salt beef stock cubes

  • Sesame seeds

  • Noodles or rice to serve (I like egg noodles!)

Preparation time: 5-10 minutes

Directions:

Cooking time: 30 minutes

1.      Pre heat pan on medium heat. Once warm add 1/2 tablespoon oil and after 1 minute add beef and cook until browned.

2.      While beef is cooking thinly slice the onion and begin to roughly chop all veggies, keeping an eye to stir through the beef pieces.

3.      Once beef is cooked remove from pan with tongs and leave juices in the pan. Add in the rest of the oil, onion, garlic and ginger and cook until translucent.

4.      Dissolve stock cube in 2/3 cup water. Add in all vegetables to pan and stir to coat for 3-5 minutes on high heat.

5.      Add in stock and mix through, then add soy sauce, chilli and honey stirring through to coat all veggies with sauce. Cook for 5-10 minutes or until vegetables begin to soften.

6.     Cook noodles or rice according to packet, adding beef back into the stir fry and mixing through.

7.    Stir through noodles with stir fry mixture or serve separately topped with sesame seeds.
